To assemble:
  1. Preheat oven to 350 F and grease a 9x13" glass baking dish with butter.
  2. Blitz pistachios and cinnamon in a food processor and set aside.
  3. Unroll phyllo dough. Cut the whole stack in half to fit the dish. Place two sheets of dough in pan, and butter thoroughly. Repeat until you have 8 sheets layered.
  4. Sprinkle 1/4 cup of the nut mixture on top. Top with two sheets of dough, butter, and nuts, layering as you go. The top layer should be about 6 sheets deep.
  5. Using a sharp knife, cut the pastry into diamond shapes to the bottom of the pan. It's easier to slice 4 long rows and then make diagonal cuts.
  6. Bake for about 50 minutes until the baklava is golden and crisp.
  7. Make sauce while the baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for about 20 minutes.
  8. Remove baklava from the oven and immediately spoon sauce over it. Let cool for about 30 minutes before enjoying :)
