Ingredients

Slow cooker Barbacoa Beef
Pico de Gallo
Guacamole
Grilled corn
Other toppings

Instructions

  1. Cube beef into chunks and add salt and pepper to all sides. Sear in a pan wit vegetable oil until golden brown. Add beef to a slow cooker.
  2. Mix all other barbacoa ingredients in a blender and add to beef. Stir to combine and set on low for 8 hours. (I like to do this the night before)
  3. For the pico, deseed and dice tomatoes and add to a bowl. Add the rest of the ingredients and stir to combine
  4. For the guacamole, mash avocados in a bowl, add lime juice, cilantro and 1/2 cup of the pico you just made. Taste to adjust for salt.
  5. To grill corn, shuck and add to a plate. Brush with vegetable oil and sprinkle with a little salt. Grill on high for about 2 minutes per side until you reach the desired char.
  6. If making your own tortilla chips, slice tortillas into 6 equal triangles and fry at 375 for 2-3 minutes.
  7. Preheat oven to 400F. Layer nachos with beef, cheese and corn. Bake for 8-12 minutes or until the cheese is melted and crisp.
  8. Serve and top with pico, guac and sour cream. Enjoy :)
