To prepare:
  1. In your food processor, blend cottage cheese, greek yogurt, pickle juice, vinegar, dill, parsely, and garlic until smooth. Season with salt & pepper.
  2. Finely dice 2 pickles and add in half to the food processor and blitz just until combined (5-10 seconds)
  3. Taste for additional salt & pepper & transfer to a serving platter.
  4. In a small saucepan, on medium heat, add your butter. When the butter in melted, add in your breadcrumbs and toast until they are golden brown, stirring consistently for even browning. (about 3-5 minutes)
  5. When ready to serve, add your diced pickle, toasted breadcrumbs, fresh dill and chives on top. (Make sure to add your breadcrumbs right before serving because they get soggy overtime!)
