Mini Chicken & Waffles

These mini waffle bites are a crowd-pleaser for any event, especially to bring to a Superbowl party! The soft waffles paired with the crispy, sticky chicken and the maple bacon are the perfect bite.

Ingredients

Waffles:
Chicken brine:
Chicken dredge:
Hot Honey Glaze:
Maple Bacon:

Instructions

For the chicken:
  1. Slice the chicken thighs into 4 small pieces and add to a bowl. Add the brine ingredients and mix to combine.
  2. Cover and chill in the refrigerator for at least 30 minutes up to 4 hours.
  3. When ready to fry, preheat the oil to 375 F. Prepare the dredge ingredients by adding them into a shallow bowl.
  4. Add one piece at a time, dipping the floured chicken back into the buttermilk and once more in the flour.
  5. Fry the chicken pieces for 3-4 minutes, 8 pieces of chicken at a time. Remove the chicken when it's cooked through or 165 F.
  6. Generously brush the glaze on the chicken and set aside.
For the waffles:
  1. Add the dry ingredients in a large bowl and whisk to combine. In a separate bowl, add milk, eggs and vanilla and whisk.
  2. Add wet ingredients to the dry, and whisk. Add melted butter and fold it in. Let the batter rest for 15 minutes.
  3. Use a mini waffle maker (or large one) and pour in desired batter to cook until golden brown. (It'll take a few tries to get the right amount of batter)
  4. When the waffles are all made, set aside.
For the glaze
  1. Add ingredients to a small saucepan on medium-low heat. When the mixture reaches a simmer, allow to cook for 8-10 minutes or until thickened.
For the bacon:
  1. Preheat the oven to 400 F.
  2. Add bacon to a parchment-lined baking sheet and bake for 15 minutes or until the bacon is almost at your desired crisp.
  3. Drizzle maple syrup on top of the bacon and cook for another 5 minutes.
  4. Allow the bacon to cool then cut the bacon into 4 to fit the waffles.
To assemble:
  1. Add the first waffles to a plate. Top with a piece of bacon, then chicken and then chives (optional). Top with another waffle and skewer with a toothpick. You can prep these the night before and refrigerate overnight or serve immediately.
  2. To reheat, add to a 170 F oven for at least 15 minutes before serving.
