Shepherd’s Pie
This classic comfort meal is perfect for rainy spring days! The savoury beef combined with the soft cheesy potatoes is a match made in heaven.

To prepare:
- Peel and quarter potatoes and boil in salted water until tender.
- Add milk, cream and butter to a saucepan on medium heat until the butter is melted.
- Rice or mash potatoes and add the cream mixture. Add cheese and salt to taste. Add egg yolks and mix to combine. Set aside.
- Heat a large saucepan on medium heat. Add olive oil, diced carrot and onion and sauté for 5-7 minutes. Season with salt & pepper.
- Add ground lamb and allow to brown for 8-10 minutes.
- Add tomato paste, grated garlic, and seasonings and let cook for a couple minutes.
- Add wine and simmer on low until the wine is almost fully evaporated.
- Add broth, Worcestershire sauce, soy sauce, frozen peas and carrots and stir. Cover and simmer on low for 20 minutes.
- Preheat the oven to 375 F. In a large baking dish add the meat, then add the potatoes on top in an even layer. Add parmesan if desired and bake for 30 minutes. Broil for 5 minutes until golden brown.
- Allow to sit for 10 minutes before serving and enjoy :)
