Burrata Peach Crostini

This appetizer is perfect for summer when peaches are in abundance. The creamy burrata with the sweet peaches is a sweet and savoury snack that is great for any occasion.

To prepare:
  1. Slice baguette. Heat a large pan on medium heat. Add 1/4 cup olive oil to the pan.
  2. Fry the slices until golden brown on each side (1-2 minutes). Using a garlic clove, scrape it on the bread slices to give it a garlic flavour.
  3. In a pan or barbecue, heat on medium-high heat. Slice your peaches into 8 slices each. In a bowl, mix sliced peaches, brown sugar, olive oil, and a pinch of salt.
  4. Grill the peach slices for about 2 minutes per side or until slightlty browned.
  5. Slice the burrata and distribute it evenly on the crostini. Add 1-2 pieces of the grilled peach on each crostini. Drizzle balsamic glaze on the crostini and top with fresh basil.
  6. Serve immediately.
