Croque Madame

This classic French dish is so comforting and hearty. The Croque Madame has the addition of a runny egg which in my opinion, pulls it all together!

Instructions

To make Béchamel:
  1. Melt butter in a medium pot on medium heat. Add flour and whisk for a minute to cook out the raw flour.
  2. Add in milk and cream and whisk to combine. Turn heat down to medium-low and whisk every couple of minutes.
  3. Whisk every minute or so until it thickens. (approx. 5 minutes)
  4. Add in grated pecorino romano, nutmeg, salt and pepper and whisk to combine. Keep on low heat while you prepare the sandwiches.
To assemble:
  1. Preheat the oven on broil.
  2. Toast the slices of bread in butter until golden brown on a pan on medium heat. Remove the bread and sear the ham for 1 minute on each side.
  3. Add the two kinds of mustard to the inside of the slices. Add cheese to both sides, along with the ham and place in an oven-safe pan.
  4. Pour the béchamel on the tops of each sandwich and top with any remaining gruyere.
  5. Broil the sandwiches for 5-10 minutes or until golden brown and bubbling.
  6. In the meantime, fry 2 eggs in butter to your preference. (I like over-easy)
  7. Top the sandwiches with the fried eggs and enjoy :)
