Instructions
- For fries, preheat oil to 350F. Use a mandolin to slice the potatoes then slice into thin strips. Add to a bowl of cold water for a few minutes and then dry off. Fry for 3-5 minutes or until soft but not golden. Heat oil to 375F and fry the potatoes once more for 2-3 minutes or until crispy.
- For steak, use a meat thermometer (I used a @meatermade) and heat a cast iron pan on medium high heat. Add a couple tablespoons of vegetable oil and season your steak with salt & pepper generously. Add one steak at a time and leave to develop a crust for 3-4 minutes. Flip the steak and leave for another coulple minutes. Add butter, garlic and fresh herbs and baste steak in the melted butter. Remove the steak at your preferred temperature, I took it off at 130F for medium rare :)
- For mushroom sauce, slice mushrooms and mince shallots and add to pan used for your steaks on medium heat. Sauté for 4-6 minutes or until soft and brown. Add Marsala wine and cook out for 2 minutes. Add heavy cream and mix to combine. Leave to simmer on low to thicken.
- For asparagus, preheat oven to 400F & Bring a small pot of water to a boil. Chop the ends off the asparagus (about 1 inch) and add to the salted boiling water for 2 minutes. Transfer asparagus to a parchment lined baking sheet and add the seasonings. Wrap 4 asparagus in a slice of proscuitto and bake for 10 minutes.
- Assemble with the mushroom sauce under the steak and a garlic sauce for the fries (I used @ladycobraasauces 🥰) & enjoy!

Sometimes pirogies are intimating to make because they’re a little time consuming. But if you’re craving the flavour of pirogies, with half of the effort, these potato pancakes are for you. They have the same flavour and toppings, such as, bacon, onions and sour cream! They’re a classic comfort food in my household.
