Instructions

For the rolls:
  1. Mix water, yeast and sugar and let sit for 5 minutes until bloomed.
  2. Add flour, salt, yeast mixture and softened butter to a stand mixer and mix on low for 7 minutes or until smooth.
  3. Transfer to a buttered bowl, cover and let rest for 1 hour.
  4. Separate dough into 6 and form into logs. Transfer to a parchment-lined baking sheet and cover with plastic wrap and a dish towel and let rest for another 1-2 hours or until doubled in size. Make sure there is space between each bun.
  5. Preheat oven to 375F. Score buns and brush with egg white and bake for 20 minutes.
  6. Let cool for 20+ minutes before slicing.
For the meat:
  1. Slice beef as thin as possible and transfer to a bowl.
  2. Add the rest of the ingredients and mix. Allow marinating for at least 30 minutes.
  3. For toppings, slice onions and sauté on medium-low for 30 minutes, stirring every once in a while until they are a deep golden brown, remove from heat.
  4. Sauté mushrooms in the same pan and cook for 5-7 minutes until they release liquid.
  5. Add peppers, salt and pepper and cook for another few minutes until the peppers are soft.
For cheese sauce:
  1. Melt butter and garlic in a medium pot. When the garlic is fragrant, add flour and whisk to combine.
  2. Add milk and whisk. Allow to come to a simmer on medium-low heat.
  3. Add grated cheese and whisk until combined. Add dijon and add salt & pepper to taste.
  4. When ready to assemble, sear slices of meat on medium-high heat for 1 minute per side. Add desired toppings and stir to incorporate. Mix the filling and desired amount of cheese sauce in a bowl. Add to a toasted roll and enjoy :)
