Buffalo Chicken Pizza

For the second pizza in my Pizza Party Friday series, I decided to make a pizza that you could eat while watching the big game! But instead of shredding the chicken, I fried the chicken into little bites which was a huge game changer!

Ingredients

Pizza dough:
Fried chicken bites:
Pickled onions:

Instructions

To prepare pizza dough:
  1. Mix warm water, yeast, sugar and olive oil in a measuring glass. Allow to sit for 5 minutes for the yeast to bloom.
  2. In a large bowl, combine flour and salt.
  3. When the yeast is bloomed, add the yeast mixture to the flour and stir until it becomes a shaggy dough.
  4. Transfer dough to a work surface, and knead for about 10 minutes or until it becomes a smooth dough.
  5. Add dough to a greased bowl and cover with a kitchen towel and allow to rise for 1 hour.
To prepare chicken bites:
  1. Dice chicken thighs into small pieces and add to a large bowl with the buttermilk, hot sauce and pickle brine. Allow to marinate for 30 minutes or up to overnight.
  2. Preheat your oil in your fryer to 375F.
  3. Add flour and seasonings in a large bowl and add your chicken bites, in small batches until fully covered. Add to a parchment-lined baking sheet and keep them spaced apart so they don't stick.
  4. Fry in batches until golden brown and crispy. I undercooked them slightly since they will be cooked again in the oven. Season with salt right out of the fryer and set aside on a wire rack until ready to assemble the pizzas.
For pickled onions:
  1. Thinly slice your red onion and add them into a mason jar. Add in the slightly crushed garlic cloves in as well.
  2. In a small pot, add your water, vinegar, salt, sugar and bring to a simmer. Allow the salt and sugar to dissolve and then allow the mixture to cool for about 10 minutes before adding it to the onions.
  3. Pour over the onions and add the fridge until ready to add to your pizza. They develop a more pink colour the longer they sit; I prepared them about an hour before adding them to my pizza.
To assemble your pizza:
  1. Preheat your oven to 425 F, along with your pizza stone or pizza steel.
  2. Split the dough into two equal portions, and roll out one into a large circle. Ensure there is enough flour or semolina under the pizza so it doesn't stick when transferring it into the oven.
  3. Add your buffalo sauce, cheese, and enough crispy chicken to cover the pizza.
  4. Bake for about 10-12 minutes or until it is golden brown and bubbly.
  5. Remove from the oven and brush your garlic butter on the crust. Add your sliced green onion, chives, a drizzle of the ranch and additional buffalo sauce. Top with pickled onions and enjoy!
