Sausage & Broccoli Rabe Gnocchi
The sausage and broccoli rabe make this easy gnocchi dish so tasty! This is a perfect recipe to try if you've never made homemade gnocchi before!

For gnocchi:
- Chop potato and boil in salted water until soft.
- Use a potato ricer and create a well with the potatoes on a flat surface. Allow to cool for 10 minutes
- Add a yolk and mash to combine. Slowly add flour and salt until a soft dough forms. Knead for 3-4 minutes or until it is fully combined.
- Divide dough into 4 and roll out into logs. Cut into small squares and use flour to extra dusting so they don't stick.
- Boil in salted water until the gnocchi floats (1 min-30 seconds).
- Sauté in butter on medium high heat until the gnocchi is lightly golden brown, remove & set aside.
To assemble:
- Sauté sausage in a pan on medium heat and crumble. Add onion just before the sausage is fully browned.
- Roughly chop broccoli rabe and blanch in salted boiling water for 2 minutes.
- Add broccoli rabe to the pan with sausage and saute for another 2-3 minutes. Add garlic, red pepper flakes, salt and pepper. Add cream and simmer for another 3 minutes. Add gnocchi and parmesan cheese. Serve warm with fresh parmesan & fresh pepper :)
