Instructions

For brioche buns:
  1. Mix water, milk, sugar and yeast and sit aside for 5 minutes. Mix in egg. Add mixture to a kitchenaid stand mixer bowl and add flour and salt. Knead for 5 minutes and add in butter a tbsp at a time and knead for another 3 minutes or until a soft dough is formed.
  2. Add to a buttered bowl, cover and rest for 1 hour. Cut into 8 equal parts and form into dough balls. Cover for another hour to rest.
  3. Preheat the oven to 400 F and brush buns with egg wash. Bake for 20-25 minutes or until golden brown.
Filling:
  1. Cook ground beef in a large pan with a drizzle of olive oil on medium heat. Once browned, add diced onion and red pepper. Add 1 tsp of salt.
  2. Add tomato paste, garlic and seasoning. Cook for 3 minutes and stir.
  3. Add the rest of the ingredients, stir and cover on low for 25-30 minutes. Adjust for seasoning.
  4. Serve on toasted buns with cheese and enjoy :)
