Smash Burgers & Fries
These juicy burgers are a crowd-pleaser with a tangy In-N-Out sauce, caramelized onions and crispy fries!

Burgers: (You can also use 2 lbs medium ground beef)

Instructions
For onions:
- 1. Dice onions and place in a pot on medium-low heat with butter & olive oil.
- Sauté for 45 minutes, stirring occasionally until the onions start to turn golden brown.
- Add balsamic vinegar and sugar and season with salt & pepper.
For fries:
- Slice fries into desired thickness and add to a bowl of cold water for at least 30 minutes.
- Preheat fryer to 325 F and dry off fries with a paper towel or dish cloth.
- Fry the potatoes for about 5 minutes until they soften but have little colour.
- Increase the fryer heat to 375F. Add fries and cook for 3-4 minutes until golden brown and crispy. Toss with salt & enjoy:)
For Burgers:
- Freeze meat grinding attachment overnight, and freeze chunks of your meat for at 30 minutes-1 hour before grinding.
- Grind meat on desired setting and form into 85 g balls. Salt each side and leave in the fridge until ready to fry.
- Add to a lightly oiled cast iron pan and add burger. Use a sheet of parchment paper & a spatula to press down the burger.
- When the burger is starting to turn brown on the edges, and it starts to turn pale on the top, flip and add cheese.
- Allow the cheese to melt and serve warm on your toasted bun with preferred toppings.
