Steak & Chimichurri Dinner

This is a perfect date-night meal that seems like a lot of work but is low effort and impressive! The zesty chimichurri, crispy wedges and classic caesar salad are a family favourite!

Ingredients

Steak:

Chimichurri (makes 1 cup):

Instructions

Steaks:
  1. Drizzle steaks with olive oil and coat in salt & pepper. Let steaks rest at room temperature for 30 minutes before searing.
  2. Heat a cast iron pan on medium high heat with 2 tbsp vegetable oil. Insert meat thermometer into the steak (I prefer meater made) and sear steaks on 5 minutes per side.
  3. Turn down heat and allow the steaks to reach rare (52 F) add a tbsp of butter, shallot and smashed garlic cloves and baste the steak for a minute.
  4. Remove from heat and allow to rest for 5 minutes before serving. Repeat with remaining steaks
Wedges:
  1. Wash and slice potatoes into wedges. Boil in salted water for 10 minutes or until fork tender but not falling apart.
  2. Drain potatoes and allow the excess moisture to release from the potatoes before transferring to a bowl (about 5 minutes)
  3. Preheat oven to 400F.
  4. Add oil and seasonings to the potatoes. Add potatoes to a parchment-lined baking sheet and bake for 45-50 minutes, turning halfway.
Caesar dressing:
  1. Add anchovy paste, egg yolks, grated garlic, lemon juice into a large bowl. Whisk to combine.
  2. Slowly add olive oil and whisk to emulsify. Add grated parmesan & pepper.
  3. To time correctly, start to cook steaks when potatoes are halfway done. Enjoy :)
