Pizza Panino

This simple yet delectable sandwich combines the best part of pizza with the convenience fo a sandwich. If you’d like to take a shot at making your own mozzarella cheese, you’ll realize it’s pretty easy!

Ingredients

Instructions

For the dough:
  1. Add the water, sugar and yeast to a measuring glass, stir and allow to sit for 5 minutes.
  2. In a large bowl, add flour and salt and mix. Add yeast mixture and mix until a shaggy dough forms. Knead on a work surface until a smooth dough ball forms and bounces back when you poke it.
  3. Add the dough to an oiled bowl, cover with a kitchen towel and let rise for 30 minutes-1 hour.
For homemade mozzarella cheese:
  1. (More detailed video on my instagram) For the cheese, heat up the milk on medium low heat until it reaches 135 F. Stir consistently.
  2. Add in vinegar and stir for 30 seconds until the curds form. Remove from heat and let sit for 15 minutes to cool down.
  3. Prepare a large bowl with a colander and 2 layers of cheesecloth. Pour in mixture and squeeze out as much of the whey as you can. Add the curds to a smaller microwavable bowl and heat up for about a 1 minute then bring the curds together with a spatula for a few minutes. Heat the cheese in the microwave until it reaches 160F with 20 seconds intervals. Add the salt.
  4. Stretch the dough with the spatula and using your hands or gloves, stretch until it forms a smooth ball.
  5. Add to a bowl of ice water and let sit while you prepare your panino.
To assemble:
  1. Preheat oven to 450F.
  2. Separate your dough in two equal parts and roll one out to your desired thickness. Add olive oil to the inside and close the dough.
  3. Bake for 5 minutes or until lightly golden brown.
  4. Add your sauce and soppressata, and your fresh cheese. And bake for another 5 minutes.
  5. Add your mortadella, prosciutto, arugula, red onion & balsamic glaze and enjoy
