Braised Beef Tomato Sauce

One of my favourite pasta sauces is a hearty bolognese with lots of parmesan on top, and this one requires barely any prep if you already have the braised beef on hand!

To prepare sauce:
  1. Add a medium pot on medium heat. Add 2 tbsp olive oil and add in diced onion and sweat for 5-7 minutes or until translucent.
  2. Add in salt, oregano, and red pepper flakes. Grate in garlic and cook for another minute.
  3. Add in the can of tomatoes and then rinse out the can, and add in that additional water. Add in the braised beef and mix to fully combine.
  4. Cover and simmer on low for 45 minutes-1 hour and season to taste with salt & pepper. If it's too acidic, add 1/2 tsp sugar.
  5. When the sauce is just about ready, bring a large pot of water to a boil.
  6. Add in your pasta, and a generous pinch of salt (1 tbsp) and cook until al dente.
  7. Save 1 cup pasta water before draining your pasta and add the pasta back into the pot. Add your sauce over the pasta, a little bit of pasta water, and parmesan at a time until the pasta and sauce is combined and
  8. Serve with additional parmesan and enjoy!
