Braised Beef Tomato Sauce
One of my favourite pasta sauces is a hearty bolognese with lots of parmesan on top, and this one requires barely any prep if you already have the braised beef on hand!

To prepare sauce:
- Add a medium pot on medium heat. Add 2 tbsp olive oil and add in diced onion and sweat for 5-7 minutes or until translucent.
- Add in salt, oregano, and red pepper flakes. Grate in garlic and cook for another minute.
- Add in the can of tomatoes and then rinse out the can, and add in that additional water. Add in the braised beef and mix to fully combine.
- Cover and simmer on low for 45 minutes-1 hour and season to taste with salt & pepper. If it's too acidic, add 1/2 tsp sugar.
- When the sauce is just about ready, bring a large pot of water to a boil.
- Add in your pasta, and a generous pinch of salt (1 tbsp) and cook until al dente.
- Save 1 cup pasta water before draining your pasta and add the pasta back into the pot. Add your sauce over the pasta, a little bit of pasta water, and parmesan at a time until the pasta and sauce is combined and
- Serve with additional parmesan and enjoy!
