Christmas tree ravioli

I developed this recipe with my friend Isabelle during the holidays and it was absolutely delicious. Making homemade ravioli is a labor of love but so worth it!

Instructions

Pasta Dough
  1. Blanch 1/2 cup loosely packed spinach and a few basil leaves in 1 cup of boiling water. Blend until smooth. Measure 150 g.
  2. Add flour to a counter top and form a well. Add spinach water and oil to the well and whisk with a fork until a shaggy dough forms. Knead dough for 5-8 minutes or until its a smooth ball.
  3. Cover dough in plastic wrap and let rest for 30 minutes.
  4. Mix filling ingredients in a bowl and transfer to a piping bag.
  5. Roll out pasta dough or use a machine until it is thickness “5.”
  6. Brush dough with water on one side and pipe 1 tbsp of filling. Use a Christmas tree cookie cutter and punch out raviolis.
Sauce
  1. Sauté tomatoes in olive oil on medium heat and cook until they become soft. Add shallots, garlic and seasonings.
  2. Cook until shallots are soft and add heavy cream. Simmer on low heat while you boil salted water.
  3. When water starts boiling, turn heat to medium high. Add raviolis and cook for 2-3 minutes or until soft.
  4. Transfer sauce to plates and top with ravioli & parmesan cheese. Enjoy :)
