This viral recipe has become a favourite in our household because of the spicy, crispy chicken in between a soft, toasted potato bun!

Ingredients

Marinade
Dredge
Slaw
Chipotle Mayo - Blend together

Instructions

  1. Add chicken thighs to a bowl and mix together with spices. Add buttermilk and pickle brine and allow to marinate for at least an hour up to 4 hours.
  2. When ready to fry, preheat oil to 375 F. Mix together dredge ingredients in a shallow bowl and coat chicken thighs and set aside for at least 10 minutes.
  3. Fry chicken for3-4 minutes or until internal temperature reaches 160F. Salt them lightly after you remove them.
  4. Finely slice cabbage and green onions and add to a bowl with the honey & vinegar. Salt & pepper to taste
  5. Blend chipotle mayo ingredients (or use store-bought!).
  6. Toast potato buns with butter and assemble sandwich with sauce, slaw and chicken. Enjoy :)
