Although it isn’t authentic, this is the easiest and tastiest weeknight meal when you have leftover rice!

Ingredients

Instructions

  1. Add shrimp to a bowl and add marinade ingredients and set aside for a few minutes.
  2. Dice onion, carrot, and green onion and mince up the garlic cloves.
  3. Heat a few tablespoons of vegetable oil in a wok on medium high heat and sear shrimp for 2-3 minutes or until just pink. Remove from heat.
  4. Add carrots, white onion and the whites of the green onions and sauté on high heat for 4-5 minutes until softened. Add peas and cook for another 2-3 minutes.
  5. Make a little spot and add a little splash of oil. Add garlic and stir to combine. Move mixture to half of the pan and add the 3 beaten eggs. Stir eggs until cooked and slightly crumbled. Mix all together.
  6. Move everything to the side and add a splash of oil, add rice. Let cook without touching for one minute. Stir together.
  7. Add sauces and add more to taste if needed. Add shrimp back in and stir to combine. Season with extra salt & pepper and serve hot :)
