Shrimp fried rice
Although it isn’t authentic, this is the easiest and tastiest weeknight meal when you have leftover rice!

Instructions
- Add shrimp to a bowl and add marinade ingredients and set aside for a few minutes.
- Dice onion, carrot, and green onion and mince up the garlic cloves.
- Heat a few tablespoons of vegetable oil in a wok on medium high heat and sear shrimp for 2-3 minutes or until just pink. Remove from heat.
- Add carrots, white onion and the whites of the green onions and sauté on high heat for 4-5 minutes until softened. Add peas and cook for another 2-3 minutes.
- Make a little spot and add a little splash of oil. Add garlic and stir to combine. Move mixture to half of the pan and add the 3 beaten eggs. Stir eggs until cooked and slightly crumbled. Mix all together.
- Move everything to the side and add a splash of oil, add rice. Let cook without touching for one minute. Stir together.
- Add sauces and add more to taste if needed. Add shrimp back in and stir to combine. Season with extra salt & pepper and serve hot :)
