Tuscan Sausage Ravioli

This viral recipe is perfect to get you started on your pasta journey! The ravioli is easy and is paired perfectly with a tuscan tomato sauce!

Ingredients

Pasta Dough:
Sausage filling:
Tuscan Tomato Sauce:

Instructions

For pasta:
  1. Place flour on a flat surface and form a well.
  2. Place eggs, yolks and olive oil in the well and whisk slowly until a dough forms.
  3. Knead for 8-10 minutes until the dough bounces back.
  4. Cover with plastic wrap and let sit for 30 minutes.
  5. When ready to make pasta, cut 8 equal pieces and flour each side. Place through the pasta setting on your kitchen aid from size 1-6.
  6. Brush one side with egg white and place a tbsp of filling with spaces in between.
  7. Seal and place on a parchment lined baking sheet until ready to cook.
For filling:
  1. Sear sausage crumbles until golden brown and cooked through.
  2. Pulse in a food processor until it is fine.
  3. Add to a bowl with the remaining filling ingredients.
For sauce:
  1. Place cherry tomatoes in a pan on medium heat with a tbsp of olive oil. When blistered, add tomato paste and diced shallot. Add more olive oil as needed.
  2. After tomato paste and dried oregano and cook for 3 mins, deglaze with white wine.
  3. Reduce for 2-3 more mins and add sun-dried tomatoes. Add heavy cream. When cream is simmering, turn pan to low and add spinach, basil, and balsamic vinegar. Season with salt and pepper.
  4. Cook ravioli in salted boiling water for 3-5 minutes or until desired doneness. Add to sauce with pasta water and serve with fresh parmesan. Enjoy :)
