Instructions
For pasta:
- Place flour on a flat surface and form a well.
- Place eggs, yolks and olive oil in the well and whisk slowly until a dough forms.
- Knead for 8-10 minutes until the dough bounces back.
- Cover with plastic wrap and let sit for 30 minutes.
- When ready to make pasta, cut 8 equal pieces and flour each side. Place through the pasta setting on your kitchen aid from size 1-6.
- Brush one side with egg white and place a tbsp of filling with spaces in between.
- Seal and place on a parchment lined baking sheet until ready to cook.
For filling:
- Sear sausage crumbles until golden brown and cooked through.
- Pulse in a food processor until it is fine.
- Add to a bowl with the remaining filling ingredients.
For sauce:
- Place cherry tomatoes in a pan on medium heat with a tbsp of olive oil. When blistered, add tomato paste and diced shallot. Add more olive oil as needed.
- After tomato paste and dried oregano and cook for 3 mins, deglaze with white wine.
- Reduce for 2-3 more mins and add sun-dried tomatoes. Add heavy cream. When cream is simmering, turn pan to low and add spinach, basil, and balsamic vinegar. Season with salt and pepper.
- Cook ravioli in salted boiling water for 3-5 minutes or until desired doneness. Add to sauce with pasta water and serve with fresh parmesan. Enjoy :)
